(Lets Pretend) If I were to mod my Xbox 360, I know I WILL NOT be able to get on live ever again with the xbox?
. ^ Continuing above. I KNow I will not be able to get on LIVE with that xbox ever again. But before I start to play with the Modded Xbox, could I completely disconnect internet from the xbox, and still log into my SN ( Ex. FlufflyPanda) to acess my previously saved games? (WITH NO problems at all?)

It depends how you were to mod the xbox, modding your account, yes you will be banned and you will be able to access your saved games, as they are saved on the hardrive, not on the servers. If you were to mod the casing and put flashy bells and lights and whatnot, i doubt it would get you banned, but any type of modding voids the xboxs warranty.
But just not connecting to the internet should allow you to play offline with your previous saved games.
