Making some kind of ice cream/cookie cake for my husband's birthday….?
My husband’s b-day is next week and he HATES cake. He doesn’t want to go out to dinner– he’d rather just stay home and relax. Last year was our first married b-day together. And it sucked b/c we went to see family…. He never got a chance to relax. So I’m trying to make up for it this year. He doesn’t want to go out to dinner. He asked me to make his favorite dish from Olive Garden and twice baked potatoes. He absolutely hates cake, but he has a weakness for cookies and ice cream.
How can I make a cookie/ice cream pie? I was thinking of pressing cookie dough into the bottom of a spring form pan and baking it and then letting it chill in the freezer and adding cookie dough ice cream and drizzling the top with Magic Shell. Do you think this will work? Or will it be hard to get out of the pan? Should I line it with wax paper or something first?
How can I make it amazing? I’m not opposed to trying different ways either.

You idea of a spring pan would work since it opens up to release the cake. Line the pan – bottom and sides with parchment paper; bake the cookie crust in the spring form pan, watching it closely to make sure that it doesn’t burn – I would start with the max. time called for in the cookie recipe and then check every couple of minute to make sure the cookie is done and not burned. The cookie crust should be golden around the edges and puffy and soft in the middle. Let it cool and then fill the pan with your favorite ice cream on top of the cookie and put in the freezer to freeze – at least 4-6 hours. To unmold, just release the spring form pan and remove the pan and parchment paper. I would cover the whole thing with hot fudge or caramel sauce mainly because I do not care for the waxy feeling and taste of Magic Shell. It will be easier to cut and serve this way, as well. Garnish with some fresh fruit or crumbled cookies.

If you want to find some great recipes, just go to recipes on the Internet, then to ice cream cakes. Yahoo has great recipes too. Ask Martha Stewart for that matter.
I have seen wonderful recipes on ice cream cake on the Internet.

I HAVE YOUR ANSWER!!! I always get tons of compliments and no one can believe that I make this out of (drum roll) ice cream sandwiches!!!
Icecream sandwiches 2 large boxes
Big cool whip
1-2 jars ice cream fudge
peanuts salted (can be omitted)
Sprinkles
Okay, you’ll need about two big boxes of ice cream sandwiches for a 13 x 9 pan. line the bottom of the pan with icecream sandwiches in order to cover the bottom of the pan you may have to slice some in half lengthwise or crosswise just get them in there evenly. then spread a layer of cool whip on top of that. Then get some icecream fudge (the recipe I use calls for choc syrup but it is too runny) and spoon out Tablepoons of fudge over the coolwhip. You don’t have to spread it just little spoonfuls all over. Now you can sprinkle peanuts over the fudge but my kids don’t like peanuts so sometimes I use candy spinkles. Then REPEAT the layers. When you put the icecream sandwiches on top of the fudge kind of wiggle them fo the fudge spreads out a little. Freeze. about 5 – 6 hours until frozen. ( I make a day ahead and freeze overnight) Take out of the freezer about 10 – 15 mins. before serving. You will be AMAZED how well this cuts. I use my spatula to cut out individual square pieces . When you cut it, it looks layered and very difficult to make and people always ask me how did I do it. No one EVER guesses it is icecream sandwiches. Also, if you have guests, sometimes I make two 8 x 8 cakes one with peanuts, one with sprinkles. The recipe with peanuts tastes like a peanut buster parfait from DQ.
